Yes I ate like crap growing up.  But that doesn’t mean my parents couldn’t cook, especially my mother.  Her side of the family was the Italian side, not too far removed from the old country.  She had a way with pasta sauces, thanksgiving meals, cookies, cakes and pies.  In fact, before I was born, my parents owned their own diner and she would make over 10,000 pies each year because they were so popular.  Truckers would make a point to stop at their establishment just for her pies.  And she made them by hand, from scratch.  No frozen pie crusts for her.  So I had a little background in the kitchen, but not much.

DISCLAIMER

Most of my knowledge abandoned me during my fat years, as the extent of my cooking was melting a piece of cheese on a bagel, or whipping up some Uncle Bens rice from a box.  Not too creative.  But I realized in order for me to take control of my health, I had to take control of the food I put into my body.  So I just started experimenting.  If something didn’t work out, it didn’t matter.  Eat it anyway and try again.  Eventually I learned my way around the kitchen, to the point where I think I would make my mom proud. 

Foods you should definitely be eating to those you should avoid at all costs.  Get to know about Protein, good and bad Fats, and how to manage the very tricky Carbohydrate intake.
